Tender beef skewers coated in a smoky peanut-chile spice blend and grilled.

Sudanese agashe beef skewers coated in a nutty peanut spice seasoning

Beef skewers
1 ¾ lbs beef sirloin, thinly sliced across the grain
2 tbsp groundnut or vegetable oil
 6 wooden or metal skewers
Peanut spice blend
¾ cup finely ground roasted unsalted peanuts
 1 tbsp paprika
 1 tsp cayenne pepper
 1 tsp ground ginger
 1 tsp garlic powder
 1 tsp ground cumin
 1 tsp onion powder
 ½ tsp ground cinnamon
 1 tsp fine salt
To serve
1 large red onion, thinly sliced
2 medium tomatoes, cut into wedges
 1 lime, cut into wedges
Prepare and grill
1

If using wooden skewers, soak them in water for 20 minutes. Pat the thin beef slices dry so the spice coating adheres.

2

Combine the ground peanuts, paprika, cayenne, ginger, garlic, cumin, onion powder, cinnamon and salt in a shallow dish.

3

Thread the beef loosely onto the skewers, folding longer strips once so the meat cooks evenly.

4

Brush the beef lightly with oil, then press each skewer firmly into the peanut spice blend until all sides have a thin, even crust.

5

Preheat a grill or ridged grill pan over medium-high heat until very hot. Lightly oil the grates or pan.

6

Grill the skewers for 3–4 minutes on the first side, until browned and aromatic with lightly charred edges.

7

Turn and grill for another 3–4 minutes, moving the skewers away from flare-ups, until the beef is just cooked and still juicy.

8

Rest for 4 minutes, then serve with sliced onion, tomato, lime wedges and any reserved peanut spice blend that has not touched raw meat.

Notes

Slice the beef thinly across the grain so it cooks quickly and stays tender. Keep the peanut coating dry and the grill at medium-high heat; excessive oil or flame can scorch the nuts before the meat is done.
